XO Noodles (Leftover Turkey Idea #2)

On to Turkey Idea #2!

I actually typed out this recipe sometime ago, but never posted it. Since I used it again tonight with more of the leftover turkey that was in my refrigerator and it turned out fine, I figured now would be a good time to post it.

Some of you outside of Asia must be wondering what in the world I mean by XO noodles. XO noodles are noodles fried in XO sauce. And what is XO sauce? It’s a spicy seafood sauce used often in Chinese cuisine, consisting primarily of dried scallop (a delicacy in Chinese cooking), dried shrimp, oil and various seasonings. (Read more here.)

Chinese Macaroni Soup (Leftover Turkey Idea #1)

I actually wrote this post some time back, but thought now would be an apt time to post it. The pictures in the post show chicken meat in chicken stock rather than turkey meat in turkey stock, but you can easily make the substitute. I had a leftover turkey the night of the 23rd, from which I made stock on the 24th, and which I used to make some macaroni soup for lunch today.

What A Treat!

Such a long time since my last post, I thought I might never blog again! But I’m too excited about the Christmas treats I’ve made this year to not blog, so here’s one last post for the holidays.

Pasta Frolla Thumbprint Cookies & Other Christmas Ideas

For those of you who read my previous post in its entirety, you might have realised that I had 1/4 of my pasta frolla (i.e. the dough that became the crostata tart crust) left unused. We were informed in the instructions for the Daring Baker Challenge that the unused dough could be used for cookies, so this evening I decided I would make me a tiny little batch of thumbprint cookies from my remaining dough.

Crostata di Longan (Daring Baker Challenge Nov 2010)

I finally joined the Daring Baker Challenge. The daring what, you say?

The Daring Kitchen is a society of sorts, consisting of two chapters: the Daring Bakers, and the Daring Cooks. The Daring Bakers are a bunch of crazy people from all over the world who love to bake, and have committed to baking one daring item each month. At the beginning of each month, the daring item for the month is revealed to the community, and before the month is up all members of the community have to bake the item and either blog about it or at least photograph it, and post their results in the Daring Baker forum.

This month’s challenge was to bake a Crostata – an Italian baked dessert tart. The Pasta Frolla (tart crust) can be filled with nothing but fruit preserve (Crostata di Marmellata), or with a layer of pastry cream (Crostata con la Crema), or with a layer of pastry cream followed by fresh fruit (Crostata di Frutta Fresca).

Chocolate Fruit Cake

Ah, my first festive bake…

My Japanese class decided to throw a little party today, as a kind of send-off for one of our classmates who was leaving the class earlier than the rest of us. A few of us had promised to bring food, and since Christmas is on the horizon, I thought it might be fun to bring a fruit cake.

I actually have a go-to fruit cake recipe that I love (and would share with you, except it’s a good friend’s trade secret so I’ve been sworn to silence!), but I wanted to try something new. After perusing a few of my cookbooks, I decided that the “Incredibly Easy Chocolate Fruit Cake” recipe out of Nigella’s wonderful Christmas cookbook would do the trick. Smoked Salmon and Egg Cups & A Thanksgiving Giveaway

One lazy day many months ago, I was vegging in front of the TV when I landed on Food Network TV Asia. Canadian celebrity chef Michael Smith‘s Chef At Home was showing,  and I found myself riveted while he made this wonderful little brunch dish. It sounded really good, and looked so easy I knew I had to give it a try sometime.

When I made it a few days ago, my husband and I gobbled it up. SO GOOD. It was creamy and rich because of the eggs and yoghurt, but also refreshing and very tasty because of the herbs. This one’s going on my list of party foods for sure – I loved it! And the best part was that it was so super easy to make…
