
One lazy day many months ago, I was vegging in front of the TV when I landed on Food Network TV Asia. Canadian celebrity chef Michael Smith‘s Chef At Home was showing, and I found myself riveted while he made this wonderful little brunch dish. It sounded really good, and looked so easy I knew I had to give it a try sometime.
When I made it a few days ago, my husband and I gobbled it up. SO GOOD. It was creamy and rich because of the eggs and yoghurt, but also refreshing and very tasty because of the herbs. This one’s going on my list of party foods for sure – I loved it! And the best part was that it was so super easy to make…
All I had to do was line a couple of ramekins with smoked salmon, mix together some eggs, yoghurt, cheese and herbs, pour that into the ramekins, and stick the ramekins into the oven. Ta da! Perfect, tasty little Smoked Salmon and Egg Cups.
I am really appreciating recipes like this right now because I’ve been pretty sickly lately, and have been warned by both Western and Chinese doctors against consuming sugar (I know right – horrors), which apparently does really bad things to your body… Weakens your immune system, hurts your heart, stirs up phlegm… Just terrible! So anyway, this recipe doesn’t call for any sugar or preservative-laden sauces – just great natural ingredients that look pretty, taste good and won’t harm your body. (Ok I know there’s a bunch of cholesterol in the eggs but my cholesterol level is fantastic so I’m not too worried about that =).
Enough chatter! On with the recipe…
Smoked Salmon and Egg Cups
(adapted from Chef Michael Smith’s recipe)

Ingredients (serves 4):
- 200g of sliced smoked salmon
- 4 large eggs or 6 small eggs (around 230-240g)
- 3 tbsp plain yoghurt
- 1/2 cup grated swiss cheese (I’m a little timid when it comes to cheese so I thought I’d stick with what I know instead of going with Michael Smith’s choice of Havarti. In any case I get the impression Swiss and Havarti are fairly similar.)
- Small bunch fresh dill, chopped (about 1 tbsp)
- Small bunch fresh chives, chopped (about 2 tbsp)
- Salt & Pepper to taste
Directions:
1. Preheat your oven to 180 degC (350 degF).
2. Line four ramekins with a few slices of smoked salmon each. You only really need to go around the circumference of the cups – you don’t need to cover the base entirely. And your smoked salmon should go at least 2/3 way up the sides of the cups.

3. Use a fork to whisk the eggs with the yogurt until relatively smooth. Stir in the cheese, dill, chives, salt and pepper. Pour the egg mixture into each ramekin to just below the top of the salmon edge.

4. Place the ramekins in a baking dish and add enough boiling water to come halfway up the side of the ramekins. (If you are using a 8×8 baking dish like I did, you won’t have a lot of space from which to add in the boiling water, so I would suggest putting just three of the ramekins in the dish at first, adding the water to 1/3 way up the side of the ramekins, then putting in the final ramekin.)
5. Place the baking dish in the oven bake until set, about 25 minutes.
And there you have it!

My favourite way to have eggs is actually in a quiche, I love it because it is so versatile, (as is any egg), but you’re able to have it in so many different forms from a frittata, to having it in a crust, mini, medium, large, etc… so delicious!

To tell you the truth…I like my eggs cooked in a variety of ways….
But at the moment, Deviled Eggs are sticking out in my mind. Probably because I am a college student, and they remind me of my mom and comforts of home…

First off, that looks delicious! I recently fell in love with salmon and eggs together, it’s great!
And I like my eggs scrambled, fried, and especially poached! Eggs benedict is probably my favorite food. I can poach the eggs myself, but having a little gadget like that would make it so much quicker!

Eggs are one of God’s incredibly clever creations plus they are delicious to me in so many ways. I like them most as Chawan Mushi.

Omelet with lots of peppers, onion and cheese
I actually find Havarti to be more mild than Swiss cheese – if you’re not familiar, give it a try. Less nutty, more creamy. Some Swisses are bitter but Havarti never is.
I love my eggs over easy, with breakfast sausage links to roll around in the yolk!

I’m a fan of Michael Smith – his cooking style is relaxed and he’s so good. You certainly did justice to his recipe, those egg cups are gorgeous.

I usually eat my eggs fried with a lovely runny yolk. I’ve never been able to poach an egg very well, so this looks awesome.
